I can't believe you're going to make city chicken! I'm from the South but I live with someone from Wheeling, WV (very close to Pittsburgh). He talked about city chicken for about 8 years before I finally decided to find out what it was and figure out how to make it for him. I had never had it nor seen it before so that was an interesting challenge. I can't wait to see how close I came to your recipe.

Oh, and I was really surprised when I discovered that the recipe is included in my 1975 edition of "joy of cooking."
